These are the A-listers of Marennes-Oléron, chosen for their naturally deep cups and pleasing appearance and allowed to fatten in the salt ponds for an additional month or so at low density (like 10 per square meter) so each gets plenty of food. The result is an oyster with firm, plump meat and a lot of sweetness to balance the salt. You will never see a thin Speciale de Claire.
