Many connoisseurs agree that the west coast of Ireland grows the best oysters in the world. It’s a combination of Atlantic exposure, cold water, and pristine environmental conditions. (Many of France’s best oysters are grown in Ireland and only finished in France for a brief period.) This is also the home of the Galway Oyster Festival, where the world’s top shucker is crowned.
