Australia and New Zealand grow some of the finest oysters in the world, and New Zealand is the only country outside North America cleared to ship live shellfish into the U.S. The Pacific oyster dominates aquaculture in both countries, and seems to develop some pronounced fruity flavors quite distinct from its North American kin, so New Zealand oysters can be a real treat for U.S. diners.
