Premium oysters raised by Muscongus Bay Aquaculture (which supplies many of the country’s top oyster farmers with their seed) in the best section of the Damariscotta River, and bottom-planted in the sandy river bottom for their last year or two to develop the thick shells, deep cups, and dense texture.
