Huge bag-to-bottom oyster farmed by the Shinnecock Indian Tribe on their reservation in the Hamptons. The bay opens directly to the Atlantic. The oysters are bottom-planted and allowed to slowly reach a massive size down there in the mud, leading to the most robust oyster on the East Coast.

Wow. These are the most impressive oysters I’ve seen on the east coast in years. They are massive, with a deep, earthy flavor and incredibly strong shells. They would be great on the grill. The emerald color is amazing, too. There’s no other oyster like this anywhere else in the region, because only the Shinnecock Nation owns their own land and can grow these on the bay bottom (as opposed to floating cages). Also, somebody is growing them slowly and letting them get fully mature, even though you can’t generally get a higher price for them. But these are worth a much higher price.
