An Island Creek oyster that, instead of being bottom-planted at six months of age for its final grow-out stage, is kept in trays, leading to a more delicately flavored meat. Skip Bennett began this experiment with row #34 on the Island Creek farm, though the oysters proved so popular that they have now taken over rows # 35, 36, 37, etc.

Such an interesting comparison with traditional Island Creeks. Less earth, less umami, more (perceived) brine. Different shells, too. This is a great example of how simple technique can change an oyster. If you have the opportunity, get six of each and explore.
