Oysters raised by a fifth-generation oystering family on the tip of Brittany, not far from Brest, where the Aber-Benoît River opens into a wide, twisting, and well-protected estuary. There, the oysters receive a very pure blast of North Atlantic Salt, tempered by a sweetness from the rich plankton in the estuary. There is a Prat-Ar-Coum Fine, which is grown on French tables (rack-and-bag) and also a Speciale that is ground-planted in the estuary to develop a stronger, deeper shell and a much richer flavor. There is also a Flat oyster for which wild spat is collected on mussel shells.

    Although not as well known as some of its brethren (such as Marenne-Oleron and Utah Beach), this was the best oyster I tasted in France. Ridiculously full flavor, and perfectly balanced between the richness of Marenne oysters and the bright brine of english Channel oysters. Worth seeking out (or visiting in person).
