Many people feel that Olympias, the native oyster of the Pacific Northwest, have the finest, most complex flavor of any oyster, with an intensity that can come as a shock, considering their diminutive size. These are raised by the Swinomish tribe, which has been eating Olys since time immemorial, on their traditional shellfish grounds in Similk Bay.
