The only oyster native to the west coast of North America, “Olys” never get bigger than a 50-cent piece, but have an intense and unique flavor of smoky copper and celery salt. Although they are many people’s favorite oyster, only a handful of families still grow them. These are farmed by Hama Hama in their coldwater location in Port Townsend Bay, on the northern Olympic Peninsula. A rare treat.
