Named for the year of the great Chicago Fire, a time when oysters were shipped by rail from the Chesapeake to Chicago. Old 1871s are shipped from Virginia (where they are grown in off-bottom cages in the Atlantic brine of the Eastern Shore’s barrier islands) to Chicago for the local market.
