Very briny but delicate flavor
Smallish, briny, sweet finish
A mild, midsized oyster with a very sweet finish—a typical Cape Cod Bay profile that almost all the Barnstable and Dennis oysters share. The shells were pale and thin and the texture delicate, indicating a tray-raised oyster, but the cups were fairly deep for tray oysters. These must be handled a fair amount. They certainly feel well cared-for.
