Unique oyster from an extraordinary spot on Shoal Bay, a north-facing bay in the heart of Washington State’s San Juan Islands. The Jones family owns a 3-acre tidal lagoon that fills with fresh seawater twice a day, yet also includes a freshwater spring and ideal protection from the rougher water of the bay. Lopez Islands are raised in the lagoon and then finished on the beaches of Shoal Bay. Nick Jones also grows Olympias and European Flats that spend their whole lives in the protected lagoon. A rare find.
