Flagship oyster of the Key Allegro Oyster Co. Grown in floating cages in the high-energy, nutrient-rich waters of Aransas Bay, near where the first American flag to fly over Texas territory was planted in 1845. High salinity and regular exposure to the wind-driven waves of Texas bays results in a briny oyster with a deep cup and full meat.

Size: Approximately 2.5 to 3 inches.
Cup Depth: Moderate, providing a balanced meat portion.
Shuckability: Straightforward, with a well-defined hinge.
Shell Strength: Sturdy.
Meat-to-Shell Ratio: Satisfactory, offering a decent bite.
Flavor: Briny with a crisp, clean finish.
Clean, strong shells, easy to shuck, nice briny bite with a mineral finish. A great example of a modern Gulf Coast oyster.
