This is Hama Hama’s summer oyster, grown in Discovery Bay (aka “Disco Bay”), a wet and wild estuary on Washington’s Olympic Peninsula that opens straight onto the Strait of Juan de Fuca, where the cold Pacific Ocean feels its way into the Salish Sea. All summer long, the cold north wind blows icy Pacific seawater into the bay, keeping it substantially colder than most of Washington State’s other oyster-growing waters. It’s all about stayin’ alive. Disco Hamas stay crisper and brinier than anything else happening in Washington in summer.
