The gentle flats of the Barnstable-Dennis stretch of Cape Cod Bay have become rightly famous for the unparalleled buttery quality of the oysters grown there. Crowes Pasture is a classic example. Farmed in raised trays on the flats, tumbled periodically, harvested by pickup truck at low tide.

We have had 50 of these twice now; once at Christmas and again on New Years. They were so sweet, with a little brine hit. They are relatively small, but I liked that, and they were easy to shuck. Guests all loved them!
