One of the new wave of high-end farmed oysters on the Texas coast, Copano Creams are grown by Lauren Dunlap in Copano Bay, a virtual ghost town in South Texas undisturbed by industry. Off-bottom cages give the oysters a tumbled apprearance and a smooth, deep-cupped shell.

Cup Depth: Moderate, offering plump, well-sized meat.
Shuckability: Easy to handle due to consistent shells.
Shell Strength: Strong.
Meat-to-Shell Ratio: Excellent, delivering full, satisfying bites.
Flavor: Sweet and buttery, with a smooth brine and a hint of nuttiness.
Plump and rich with an amazing velouté finish. Really nice!
