Oysters raised in off-bottom cages by Bill and Amelia Strieber in Aransas Bay. Unusual for the Texas coast, the area has a hard sand bottom at the edge of a pristine grass flat. It receives highly oxygenated water and a significant nutrient load from the grass flat on both the incoming and outgoing tides, resulting in rapid growth and a hearty marine brine with a consistent salinity averaging 27 ppt. They come as both “Petites” (2.5” to 3”) and “Selects” (3.0” to 4”).
