Farmed by husband-and-wife team Seth and Amy Belaire (and occasionally their three children), Big Trees are grown in north Copano Bay, not far from the venerable live oak for which they are named, and which has survived 50 hurricanes and counting. Raised in floating cages, the oysters are flipped and tumbled regularly to produce deep cups and plump meats.
